Abocada a la plana de Vic, testimoni del mar de boira a l’hivern i dels camps de conreu daurats a l’estiu, hi ha una masia que conserva tota la calidesa, l’aroma i la pols de les cases de pagès antigues però que amaga dins seu un gran secret: una explosió de sentits, un viatge pels sabors de la terra, un nou concepte gustatiu.

Es tracta de Can Jubany, a tocar de Calldetenes, el restaurant que Nandu Jubany i Anna Orte regenten des de 1995. L’aparença tradicional d’aquest establiment de visita obligada encaixa a la perfecció amb les línies contemporànies i el mobiliari modern de l’interior. És la traducció arquitectònica d’allò que es cou als fogons del xef: una cuina que recopila l’experiència dels plats tradicionals per reinventar-los; productes que passen del bosc i l’hort al plat; receptes innovadores que conserven l’essència de tota la vida.

The complete renovation of the restaurant in 2010, coinciding with the 15th anniversary of its opening, helped make it more welcoming and functional: enlarged spaces, a fully equipped kitchen open to the garden through large windows, a new reception, the fireplace lounge, the outdoor terrace, the reserved rooms, the dining rooms on the first floor, the new bar, the kitchen table… Everything, designed to convey the warmth, familiarity and friendly service that have always been Jubany’s calling card, to breathe peace and comfort while eating good local cuisine.

In 1995, at the age of 23, Nandu Jubany and Anna Orte started a new stage in their lives, in which the Can Jubany project began.

Nandu Jubany was born on 19 January 1971 in Monistrol de Calders. At the age of 18 he joined Urbisol, the family restaurant, as head chef, and later worked in other prestigious establishments such as the Cabo Mayor in Madrid and the Fonda Sala d’Olost del Lluçanès, where he began to work in the preparation of beef. He also spent some time in the Basque Country, in Juan Mari Arzak’s kitchen, and at Martín Berasategui’s Bodegón Alejandro, where he became aware of what it means to work in a gastronomic restaurant.

 

In this first stage, two Catalan chefs left a notable mark on his life and profession: Carles Gaig, in whose establishment he cooked during his weekly rest days and with whom he had a close human and culinary affinity; and Faust Terra, known as Marcel, who gave him the necessary confidence to begin his career as a chef in a gastronomic restaurant.

 

Later he worked at the prestigious Cabo Mayor restaurant in Madrid. From 1981 to 1989 he trained in other places such as the restaurant Fonda Sala (Olost), restaurant Marcel (Sabadell), restaurant Gaig (Barcelona) and restaurant Arzak and Bodegón Alejandro (País Basc).

 

This is how Nandu Jubany’s gastronomic proposal seeks and finds a balance between quality traditional cuisine and a modern and brilliant one, between complexity and subtleness. Always with local and seasonal products and reinvented recipes that take care of the smallest detail.

 

‘The secret is to know the popular recipes well and to appreciate the gastronomic origins that explain so many things about why we are the way we are. But at the same time not to give up anything, and to elaborate one’s own recipe full of classic statements and modern approaches. Can Jubany is a pleasure for the senses. It is effort, enthusiasm and passion for doing things well. It is an invitation to explore and discover a new concept of the sense of taste’.

Anna Orte was born in 1972 in Rubí. At the age of 17 she met Nandu, as she was spending his summer holidays in Monistrol de Calders.

 

She studied Administration at the University of Terrassa. During the summers she worked helping Nandu on Saturdays and Sundays at La Masia del Solà.
When she finished her degree she went to work in Sabadell to train in an administration company.

 

From the age of 20 they began a period of working more closely with Nandu. She worked at the Urbisol restaurant, near Calders. At weekends she worked at La Masía del Solà. This was a period that lasted until she was 23 years old.

 

Anna Orte remembers that Nandu at a very young age already had his goals very well defined, so she chose to accompany him on the journey. She explains that she was a very introverted girl, but finding herself in the situation of having to undertake and be trained at the age of 23 helped her to grow as a person.

 

In 1995, at the age of 23, she started a new stage in her life, in which the Can Jubany project began. It was a great challenge at the age of 23-24 to open a business and start living together with Nandu. The beginnings are not always easy, they all lived together with the team they had at the time.

 

They always remember that the adaptation during the first year was more difficult than they had imagined.
Can Jubany was closed on Saturdays at midday and Sundays to help the family business with weddings. All this also overlapped with the arrival of their first son, Eudald Jubany, born in 1999. They currently have three children, Eudald, Gil and Lluc.

 

Since the beginning of Can Jubany, Anna has always had a very important role and presence within the company.
Today she has become the face and image of Can Jubany.

The dishes we prepare and serve are the result of passion, effort, enthusiasm and the strength of teamwork.
